A bright, tropical meal with a delicious barbecue finish:

Bring a little sunshine to the table with this easy Pineapple BBQ Glazed Chicken. Tender chicken pieces are coated in a sweet, tangy, smoky glaze made with Nutriblends Pineapple Barbeque Sauce, then served with colourful vegetable rice and lightly grilled pineapple slices.

The result is a balanced plate with juicy chicken, caramelised edges, bright tropical flavour, and a gentle barbecue warmth. It is simple enough for a relaxed family meal, yet attractive enough for weekend entertaining.

Recipe highlight: Nutriblends Pineapple Barbeque Sauce combines the sweet-tangy character of tropical pineapple with rich barbecue flavour, making it an easy way to add depth and shine to grilled or oven-cooked chicken.

Serves: 4 people

Preparation and cooking time:

Preparation: 15 minutes, plus optional marinating time

Cooking: 25 to 30 minutes

Total: Approximately 45 minutes

Ingredients:

For the pineapple BBQ chicken:

- 800 g boneless chicken thighs or chicken breast, cut into medium-sized pieces

- 120 ml Nutriblends Pineapple Barbeque Sauce

- 1 tablespoon cooking oil

- 2 garlic cloves, finely grated or minced

- 1 teaspoon fresh ginger, grated

- 1 tablespoon lime or lemon juice

- ½ teaspoon smoked paprika or mild paprika

- ½ teaspoon black pepper

- Salt, to taste

- 1 tablespoon chopped fresh coriander or parsley, for finishing

For the colourful rice:

- 2 cups cooked long-grain rice

- ½ cup sweet corn

- ½ cup green peas

- ½ red bell pepper, diced

- ½ small onion, finely chopped

- 1 tablespoon cooking oil or butter

- Salt and black pepper, to taste

- A squeeze of lime or lemon juice, optional

For the grilled pineapple:

- 4 to 6 fresh pineapple rings or thick pineapple wedges

- 1 teaspoon cooking oil

- A small pinch of chilli flakes, optional

- Fresh coriander or mint, optional, for garnish

How to Make It:

1. Prepare the chicken marinade.

Place the chicken in a bowl and add the Nutriblends Pineapple Barbeque Sauce, oil, garlic, ginger, lime or lemon juice, paprika, black pepper, and a little salt. Mix until every piece is evenly coated.

For a deeper flavour, cover and refrigerate for 30 minutes to 2 hours. If you are short on time, the chicken can be cooked immediately; the sauce will still provide a rich, fruity barbecue finish.

2. Cook the chicken

Heat a large frying pan, grill pan, or barbecue over medium-high heat. Add the chicken pieces in a single layer, leaving space between them so they brown rather than steam.

Cook for approximately 5 to 7 minutes on each side, depending on the size of the pieces, until the chicken is cooked through and the outside is caramelised. Turn the pieces regularly so the pineapple BBQ glaze does not burn.

If cooking in the oven, arrange the chicken on a lined baking tray and bake at 200°C for approximately 20 to 25 minutes, turning once halfway through. Brush with a little extra Nutriblends Pineapple Barbeque Sauce during the final few minutes for a glossy finish.

The chicken is ready when it is fully cooked in the centre and the juices run clear. For best results, allow it to rest for 3 to 5 minutes before serving.

3. Make the colourful rice.

Heat the oil or butter in a saucepan or frying pan. Add the onion and diced red pepper, then cook for 2 to 3 minutes until slightly softened.

Add the sweet corn, green peas, and cooked rice. Season with salt and black pepper, then stir gently until everything is hot and evenly combined. Finish with a small squeeze of lime or lemon juice for freshness.

4. Grill the pineapple

Lightly brush the pineapple rings or wedges with oil. Place them on a hot grill pan or barbecue and cook for 2 to 3 minutes on each side, until lightly charred and golden.

For a little extra heat, add a pinch of chilli flakes before serving. The natural sweetness of the pineapple pairs beautifully with the savoury, smoky chicken glaze.

5. Assemble the plate.

Spoon the colourful rice onto each plate and arrange the pineapple BBQ chicken alongside it. Add the grilled pineapple, then finish with chopped coriander or parsley and a few fresh herbs.

Serve immediately while the chicken is warm and glossy.

Serving suggestions:

This meal can be enjoyed as a complete plate on its own, but it also pairs well with a crisp green salad, grilled vegetables, coleslaw, or warm flatbread. For a lighter option, serve the chicken over salad greens with grilled pineapple and a spoonful of rice.

For a family-style presentation, place the chicken, rice, and grilled pineapple on separate serving dishes and let everyone build their own plate.

Simple Variations:

You can prepare the same pineapple BBQ glaze with chicken wings, drumsticks, chicken skewers, prawns, or firm tofu. For a vegetarian version, brush the sauce over grilled mushrooms, peppers, onions, and halloumi.

If you enjoy more heat, add fresh chilli, cayenne pepper, or chilli flakes to the marinade. If you prefer a milder flavour, balance the sauce with a little extra lime juice and serve with cooling salad or yoghurt dressing.

Why this recipe works:

The pineapple brings a bright fruity sweetness, while the barbecue sauce adds savoury depth and caramelised flavour. Grilling or roasting helps the glaze cling to the chicken, creating the glossy finish and rich colour that make this dish so inviting.

It is also a practical weeknight recipe: one sauce does the work of several ingredients, the chicken cooks quickly, and the rice can be prepared using leftovers from the previous day.

Final Note:

A good meal does not need to be complicated. With tender chicken, colourful rice, grilled pineapple, and the distinctive sweet-tangy flavour of Nutriblends Pineapple Barbeque Sauce, you can create a bright, satisfying dish that brings people together around the table.

For an attractive presentation, arrange extra mango cubes and banana slices in a small fruit basket or serving bowl beside the parfait. Add the final layer of granola just before serving to keep it crunchy.
